  • 4 piece Slices of salmon (about 200 g)

Grilled octopus with baked potatoes

As scary and mysterious as it is delicious: octopus. The Mediterranean area is full of dishes that can make you lick your fingers and, if you manage to find a reliable fishery, you can try them at home. I had a frozen octopus of about 1.6 kg, from which I prepared two absolutely fabulous recipes: grilled octopus (this one) and baked octopus (a future post).

Ingredients (four servings, as an appetizer)
4 tentacles from an octopus of at least 1.5 kg
Olive oil
A bay leaf
1 glass of white or red wine, sec
600 gr potatoes
Freshly ground black pepper, sea salt

1.If you start with a whole octopus, thaw it, then wash it well and let it drain. It's completely different if it's a fresh octopus, being mandatory the cleaning and tenderizing stages in the case of the frozen one, someone took care of it, fortunately.

2.Cut the tentacles with a kitchen scissors (or a knife, if you don't have one). Remove the black hole of the ink bag, it doesn't look appetizing on the plate at all and it's not a big loss. Keep your head and body for the "oven" recipe. The 4 tentacles that will reach the grill must be boiled in water to cover them with a glass of wine, along with the bay leaf. Remember that no salt is needed, this mollusk has been in salt water long enough to reach the kitchen. Boil for about 60 minutes, until tender, but no longer.

Peel the potatoes, cut them into cubes or leave them whole, as you prefer. Sprinkle generously with olive oil, season with sea salt and grind pepper on top. Put them in the oven, but make sure they penetrate well, they are soft rather than crunchy.
After boiling, drain the octopus tentacles on a wooden bottom, grease well with olive oil and quickly stir on the hot grill, no more than 3-4 minutes.

Arrange the potatoes on a plate, sprinkle the paprika as you like and place the tentacles in the middle, cut into rounds. Sprinkle with oil and lemon. If you have time, make an alioli sauce or any garlic sauce you like.
Be sure to have a glass of wine with you, white or red, just to be good and dry, otherwise the octopus will get upset!
