The livers are washed and kept in milk for a while in the fridge. We beat 2 eggs with a little salt. We take out the livers and crush them with the potato crusher. Then we grate the cheese. salt and finely chopped parsley. Add half a boiled and crushed potato. From this mixture are formed balls that are rolled in breadcrumbs and fried in hot oil in which I melted a little butter. Bake on both sides and remove on a paper towel.

Boil the natural potatoes in cubes in salted water or in the juice strained by the vegetable soup and then sprinkle with a little melted butter, sprinkle with a pinch of salt and sprinkle with green parsley.

The cheese is cut into thick squares, beaten with 1 beaten egg, flour and breadcrumbs. Fry in 4 tablespoons of hot oil, preferably in a large pan. Bake on both sides and drain on a paper towel.

From the remaining beaten egg we make a mini omelet with leeks and a pinch of salt and flour.

Serve everything on a plate sprinkling freshly picked green parsley on top!

Good appetite!
