A wonderfully different salad. This salad is made by tossing brown rice with crumbled bacon, red pepper, spring onions, peas, flaked almonds and coriander in a creamy dressing.

  • 325g uncooked brown rice
  • 600ml water
  • 250ml half fat soured cream
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lime juice
  • 2 teaspoons honey
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chilli powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 rashers streaky bacon
  • 1 red pepper, diced
  • 1 bunch spring onions, chopped
  • 75g frozen green peas, thawed
  • 25g toasted almond flakes
  • 2 tablespoons chopped coriander

  1. Place rice and water in a medium saucepan and bring to the boil. Reduce heat to low, cover and simmer 45 to 60 minutes.
  2. In a medium bowl, mix the soured cream, red wine vinegar, lime juice, honey, cumin, chilli powder, salt and pepper. Refrigerate until ready to use.
  3. Place bacon in a frying pan. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  4. In a large bowl, mix the rice, dressing mixture, bacon, pepper, spring onions, peas, almonds and coriander. Chill at least 1 hour before serving.

I enjoyed this, but I like unusual/exotic dishes. However, the group of ladies I served it to didn't seem to enjoy it, nor did they ask for the recipe (which they always do when they like a dish served at our ladies luncheons.) If you like out-of-the-ordinary fare, you'll probably enjoy this. The cilantro (must use fresh, not dried) really makes this dish!! It needed more salt, and I doubled the amount of peas and almonds.-26 Jun 2003

Excellent salad! I left out the honey because I prefer the tanginess of the dressing without it. The only change I'll make next time would be to double the spices for a little more flavor.-01 Jul 2005

Good stuff! I made this for a family party ... that I later had to skip ... so I was left with a double recipe's worth. I am eating it this week for lunch at the office. I am gussying it up for the sake of variety...with (at this point) either horseradish or garlic paste (available at the Indian gorcery; looks a lot like horseradish). My one comment on the original recipe: I'm not sure if the bacon added anything at all, except keeping it out of vegetarian hands!-03 Jun 2004

Quick And Simple Versatile Ingredient Swaps and Add-ins

As I said above, this cold rice salad is basically made up of just three elements: rice, vegetables, and dressing. All of which can be experimented with for a truly versatile dish.

This recipe is excellent as I’ve suggested. However, it’s also a fantastic end-of-week option for using up leftover veggies and fresh produce. It can be customized with whatever you have to hand, really.

Here are a few super simple ways to easily adapt this recipe:

  • For even more Mediterranean rice salad vibes: Feel free to add in more delicious Med flavors such as sun-dried tomatoes, vegan feta cheese, etc.
  • A grilled Med veg version: As a perfect BBQ accompaniment, mix in some BBQ grilled peppers, onion, zucchini, and eggplant.
  • For a cowboy salad version: ‘cowboy salad’ is a dish adapted from the popular ‘cowboy caviar’ (aka Texas caviar – a simple bean salsa dish), which includes beans, corn, bell peppers, tomato, red onion, and cilantro. Serve with the dressing I’ve suggested or a sweet vinaigrette.
  • For more heat: Add in some chopped chili or chili flakes.
  • Do you want additional crunch: Add some raw or lightly toasted flaked almonds, pepitas, or sunflower seeds.
  • For a heartier meal (and extra protein!): Add a cup of cooked legumes – such as beans or chickpeas. Grilled/ marinated tofu would also work.
  • Add more flavor: with fresh herbs cilantro, mint, basil, parsley, dill, chives – pair whatever you have available with the ingredients in your dish.

There are tons of other ways to adapt this vegan Buddha bowl to your needs too. But for the sake of not overly complicating this post, let’s move on!

  1. Whisk together the dressing ingredients in a small bowl.
  2. In a large mixing bowl place the cooked rice, chopped apples, chopped red pepper, finely chopped onion, cashew nuts, dried cranberries, and half of the chopped parsley.
  3. Give it a good stir with a spoon so everything is mixed thoroughly and pour on the dressing.
  4. Mix again until all rice grains are coated in the curry dressing. Garnish with the remaining parsley.

A brown rice salad like this vegan, fiber-rich salad with earthy mushrooms, sweet corn, crunchy almonds, and sweet cranberries is what makes me look froward to meatless diet days such as for Meatless Monday.

Since we have more than one days in week when we don't eat meat and stick to vegetarian diet. Those days, I love packing hearty salads for lunch which are loaded with veggies and full of nutrition. Like this brown rice salad. Not only it is full of fiber. it has two serving of veggies with maitake mushroom and sweet corn, and lots of fresh parsley! Plus a lemony dressing that I has power to make everything delicious!

Without doubt lemon freshens up and brightens up this nutty rice salad. In fact, it even improves the flavor as salad sits in this dressing. Some lemon zest, lemon juice, olive oil and salt. These simple ingredients take rice flavor to new level. What else do I want for a dressing?

I think, my inclination for lemon and rice comes from one of my favorite Indian rice side - Lemon Rice. If you have never tried it, I highly recommend checking the recipe. This is also great side/mini meal to pack for lunch.

So today, I thought to bring to you this easy breezy recipe for two reasons: my love of brown rice and meatless Monday!

First, love for Brown Rice! These days I'm obsessed with using brown rice in cooking. And it is not that easy. Most Indians are hard-core white basmati rice lovers and I have two in my home. (me and Vishal) lol! Recently I did a review of boil-in-bag Success rice. I brought few packages to try recipes and just fell in love with easy to use packaging and quality of rice. Now, this post is not a paid review but I must say, I'm using their Brown Rice so often. Even Vishal agreed to try and liked it.

You know, in my book healthy don't have to be boring. actually I can't afford to keep it boring!! (as if was trying ))

Thing is, Vishal will not eat brown rice simply because they have something "healthy" attached to them. So, first I thing in mind was, how to make brown rice taste delicious?! Then, I build the flavors around it to compose a recipe that Vishal will enjoy. I started baby-steps with salads. For example last time I made this rice salad.. it disappeared from dinner plate (I served on side with chicken) much faster than I thought! (voila!)

Second reason is meatless Monday. I often drift from this rule of starting Monday healthy because in my culture Tuesdays are meatless rather than Mondays. So, today I thought to follow the vegetarian Monday rule and share a delicious way to keep Monday healthy with this Brown Rice salad. Sounds good?

In my home, such hearty vegetarian salads are often packed for lunch. So, you can say this is third reason to share this recipe. I wanted to give you a simple, quick, healthy and veggie-full recipe to pack for your kiddos. Other than a touch of paprika which you can skip, everything in this salad is lite and suitable for kid's palate. Plus you can ready this salad, a night before. Like I assembled this salad yesterday while getting ready for weekday. If you follow me on Instagram, I'm sure you have seen a glimpse of this yesterday.

Making this salad is super easy. By the time rice cook in a boiling pot of water.. I saute the mushrooms and corn in oil, garlic, sun-dried tomatoes, cumin and chili powder.

Sweetness of corn balances the subtle spice and complements the earthy flavor of mushrooms. Once veggies are cooked, I transfer them to wide bowl so that I can toss'em with brown rice easily.

Once brown rice are cooked, I spread them on a plate to cool a bit. In meantime, I assemble quick dressing for rice. Toss everything together with silvered almonds, sweet cranberries and lots of fresh parsley and you have salad that can be served three ways!

a) A simple veggie-loaded lunch
b) Delicious and healthy side for family dinner.
c) Vegetarian Potluck salad to impress friends and family! (did I say it travels well?)

Seriously, loving this salad!

On side note, I recently moved the location in home where I take pictures. Since days are long and sun is shining so bright. my existing setup was resulting in too bright pictures. So, I moved the location to low-light window. still experimenting with it.

Ingredients

  • 2 tablespoon soy sauce
  • 2 cup cooked brown rice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup sultanas
  • 1/2 cup roasted peanuts
  • 1/2 cup roasted pumpkin seeds
  • 1/4 cup roasted sesame seeds
  • 1/2 cup each diced red and yellow capsicum
  • 4 spring onions, finely chopped, or ½ red onion, finely chopped
  • 1 teaspoon sesame oil
  • splash of olive oil
  • 1 lemon, juice only
  • 1 garlic clove, crushed
  • salt and black pepper

Method

Notes

To cook brown rice faster, cover with water and soak overnight in a saucepan. Drain, then refresh the water and cover by 2cm. Boil, covered, for 12-15 minutes. Leave to steam for 5 minutes. For a change, try adding any or all of the following: diced celery, chopped parsley, halved cherry tomatoes and sliced courgettes.


Recipe Summary

  • 7 tablespoons extra-virgin olive oil
  • 1 medium onion, finely chopped (1 1/2 cups)
  • 3 cloves garlic, minced (2 tablespoons)
  • Kosher salt and freshly ground pepper
  • 1 1/2 cups long-grain brown rice
  • 1 pound small heirloom or cherry tomatoes, halved (3 cups)
  • 3 medium Kirby cucumbers, peeled, quartered lengthwise, and sliced crosswise (3 cups)
  • 3 tablespoons sherry vinegar
  • 8 ounces feta, crumbled (1 1/2 cups)
  • 1 cup lightly packed flat-leaf parsley leaves, roughly chopped if large
  • 1 cup lightly packed fresh mint leaves, roughly chopped if large

Heat a medium saucepan over medium-high. Swirl in 2 tablespoons oil. Add onion, garlic, and 1 teaspoon salt cook, stirring occasionally, until fragrant and translucent, 3 to 4 minutes. Transfer mixture to a large bowl. Return saucepan to medium-high heat with 1 tablespoon oil and rice. Cook, stirring occasionally, until nutty and golden in places, 2 to 3 minutes. Add 2 1/4 cups water bring to a boil. Stir once, reduce heat to low, and cover. Cook until rice is tender and water has been absorbed, 35 to 40 minutes. Remove from heat let stand, covered, 5 minutes.

Transfer rice to bowl with onion mixture let cool about 20 minutes. Stir in tomatoes, cucumbers, vinegar, and remaining 1/4 cup oil. Season with salt and pepper. Fold in cheese, parsley, and mint serve.


The Skinny on Brown Rice Tomato Basil Salad

With brown rice in the refrigerator and tomatoes and basil on the counter, I was able to whip up this wholesome low fat brown rice tomato basil salad in less than ten minutes.

I made a couple of adjustments. I used red wine vinegar since I didn’t have champagne or rice wine vinegar. And used honey instead of sugar.

It you want to make this brown rice tomato basil salad ahead, leave out the basil until serving time.

If like me you find cooking rice a challenge, you may want to do what I did – invest in a rice cooker (affiliate link) . It’s made my life so much simpler. Sticky and/or scorched rice are now a thing of the past.

This is delicious - just as written. Wow!

I make lunch for the ladies in my office (four of us total) and this was a hit with everyone. I did not serve with shrimp, but alongside a tossed green salad with homemade vinaigrette. A perfect, light lunch for the weekday!

This is a fabulous salad with many delicious and complex flavours and textures. I love the tangy slightly sweet dressing and the pistachios and basil take it over the top. I've made it several times for six as well as two with leftovers. I think that next time, for some variety, I will try a wheatberry or faro grain to replace the rice. Yum
